I have read somewhere that the "air" contained in such products is mostly nitrogen and that its presence renders refrigerant gases used as propellant agents less toxic than instances when those gases constitute the main content of a pressurized container. I could be wrong though, it's a bit confusing.

That business about the color of margarine being prohibited, I remember very well. In the package of margarine, there was a small package of food color added. The first task for the homemaker was to mix the color into the lump of margarine.

If I remember correctly, margarine came about because of a contest held by the French Government (during/after WWII) to find a low-cost table butter substitute.

I thought so as well and we were not too far off except for the time period. This piqued my curiosity so I read the Wikipedia about margarine. It was indeed invented in France following a contest but the originator of the contest was Emperor Louis Napoleon III and it was in the 1860's. The monarch wanted a low-cost and above all less perishable substitute for butter to provide armed forces with during military campaigns.
