Would it be possible to replace the fujimi tub with the interior tub of the Tamiya WRC Evo VI?

The interior of the Tamiya Evo VI has no "tub". For your project, you can probably dispense with the tub alltogether and glue the drivers seat in + dashboard. It would look a lot more realistic, you'd just need to cut the door part of the tub and glue it to the side..

Has anyone seen the new Tamiya Lancer Evo 7 yet? Will the interior be suitable for use with the Fujimi Garage Shirokuma Lancer evo 7?

I would say so. It won't be totally accurate but better than the interior in the kit.
