Ok i wasn't about to quote everyone on here cause that would be like 12 different posts. But I'll address everyone's reply as best i can.
Unit 5302- As far as the power from my mods go, i was thinking more along the lines of 240-250, 250 if i'm lucky cause the engine has 175,000mi. on it. For those of you talkin' Twin Turbo- It's not a twin turbo i know that for a fact, i've seen under his hood before. Completely stock, naturally aspirated. Los- I estimate i'm running somewhere in the 14.3-14.5 range. I raced and beat another mustang that claimed to be running 14.4 with just pullies, offroad h-pipe, and mufflers. Now HE raced the same car i wanna race and he beat the 300zx by about 2 car lengths.

If he's running mid 14's and he's only able to beat a N/A 300ZX by 2 lengths, that's pretty sad...
My 1987 GT had 161k on it. It took my 2002GT by 3 cars from 0-80, and it was quicker on the freeway too. It had BBK Catted H Pipe, Dynomax catback, K&N panel, removed silencer. It depends on how the car was treated how the mileage will affect performance on the 5.0s. From my experience, the average 5.0 begins dropping off a little at about 120k.

well up to 130,000 miles it wasn't treated very well. But since i've had it, it's been getting regular oil changes and changed out coolant every so often. So for about 40,000 miles it's been babied fairly well. But when i bought from the used car dealership/salvage yard it had been sitting for about 2 years without it even being started. It was in pretty bad shape.
oh yeah and just curious but how were you able to beat a 2002 GT with so few mods? 99+ come with 260hp/302 lb.ft. torque didn't they? which your '87 may have had between 230-240hp and 300 torque with those mods.

I beat the 2002 by flooring the 87, and shifting hard. The 2002 was being driven by my friend, who is also a very competent driver, better than me in fact. The 2002 was nearly as quick on the freeway, but from low down, it wasn't even competition.
It's the same way my 87 was able to beat 2 LS1's, dozens of LT1s (they were usually able to even out with me at about 120mph), and never lose a race, save a 96 Vette in Arizona. Maybe the 87 had some sneaky work done to it before I bought it, but as far as I know it didn't. The 2.73 rear gears and the 2.95 1st gear on it's Z spec T-5 weren't exactly stellar for performance either.

With 3.73 rear gears taking a N/A 300ZX should be cake for a 5.0.
