I sort of liked the 05 250 ninja but didnt want to get brand new bike to start. Are there any similar bikes out there, and are the older modles nice and easy to learn on?

Just get an older Ninja 250. The technology hasn't changed much in the last decade or so on the smaller displacement bikes.
