Actually, you can get 400-600 CFM 2 bbl carbs, and those are enough for 400hp... At that point though, the 2 bbl manifold would probably be the biggest restriction.
It doesn't have to be an LT1, they're just the nicest. Even a throttle body injected V8 will be an improvement over your stock 350, as far as driveability and reliability are concerned. I'd pick up that Caddy V8 just to have it on hand... it's worth a fair bit more than $400, and would make a nice swap into a Cavalier or a Fiero...
