2008 silverado dahboard says engine hot air conditioner off

when driving long distances at 70 mph my dashboard said engine hot air conditioner off the temp dropped to lowest setting the truck still runs fine and when checked the temp was 180-190 it only happens on long trips changed thermostat and still no improvement has any one experienced anything similar

what does the engine temp operate at ? does the engine temp vary when operating ? It should not vary ........

the engine temp sensor maybe defective ..
