2000 cav engine revs while at stop

At a stop sign my engine started revving over 2500 rpms nearly shoving me into traffic! my foot not near the gas. I put it in neutral and watched the rpms rise and drop like a ghost was playin round in the engine. then it raced up to 3000 and wanted to stay there so I shut it off. I started it back up and it didnt have a bit of trouble for the rest of the trip. I dont want to have to put it in neutral every time I come to a stop. What the hell?! This car is out to get me! I also would like to know if I can turn off the traction control. Taking off from a stop sign and dropping to a crawl as you get half way into traffic is running me out of underwear!

Remove and clean the IAC valve, they stick sometimes and the PCM tries to relearn what to do to make it idle (the "hunting" up and down)
