'08 Uplander: Install your own options?

I'm currently in the (very preliminary) process of buying an '08 LT leftover. I've located about 30+ vans and made offers on 15 of them (LT models with minimum options - for example, no leather seats). So far, the counter-offers coming back are pretty bad - which is not unexpected since it's still very early. However, if none of these 15 offers come down to earth before they completely sell off, Plan-B is to purchase an '08 LS leftover. Problem there is these things have next to nothing on them in terms of options.

Here is what CAN be missing from an LS:

Rear window defroster, power sliding doors, power rear quarter windows, alloy wheels, Privacy glass, side airbags, anti-theft system, power driver's seat, rear ventilation ducts, heated mirrors, cruise, steering wheel controls, overhead console, dual-zone A/C, leather-wrapped steering wheel, lighted vanity mirrors, rear audio, rear headsets, DVD, video monitor, A/V input or remote control.

But many of these things are typically added as packages to an LS.

Two things you apparently CANNOT get without buying the LT are captains' chairs and the roof rack. How hard would it be to install either of these myself? Anybody out there done either of these (or installed any other options themselves in an LS)? I know someone here was talking about either installing captains' chairs or adding arms to his bucket seats in his LS at one point. What came of that project??
