3.73's vs. 4.10's

I have an 87 Sierra classic. I recently swapped in a built 350 in place of the 305. The truck came from the factory with a 700r4 with overdrive and a 2.73 rearend.Obviously I want better gears for more power. I was wondering if I should go with a 3.73 or a 4.10? This truck is a semi daily driver so the gas milage isn't extremely important, but I would like for it be decent.

It depends on how built the 350 is.
If it's mild to healthy (300HP to 425HP) then the 3.73 will be excellent.
If it's above 450HP then the 4.10s would be good.
The 700R4 has a fairly short first gear so you may want to keep that in mind.
I would also think about having the 700R4 rebuilt with TCI or B&M parts. It may not live very long behind a healthy engine.
Oh, and a matched torque converter is a must also. Talk to TCI or B&M about what converter would be best for your engine/gear combo.
