Sunbird problems

1989 sunbird 2.0 ohc. Having some problems...Ok i just ripped motor down and redone the motor with new bearings and all that good crap...Here is the problem, the temp gauge don't work, put new sensor and even ecm. still dont work. It runs like crap, sounds like its running rich and loading up. When accelerating it like jerks in and out of say a powerband so to say.
I put a mechanical gauge in it and it over heats to 240 and i shut it off the fan does work cause its hot wired to turn on. I drive it everyday so. What do you think i should try? new sencors like MAP TPS tune up-parts, IM LOST!!!
