Temp Gauge Question

Whats wrong with my car...
My temp gauge goes up & down whenever it feels like it. It just started last week. It's never gone past 1/2 way & i've only heard the fan come on a couple times. Now, if i'm sittin at a light, when i take off the gauge will quickly go up near the H & then it just drops back down to below 1/2.
& sometimes it will go up when i'm accelerating & then drops, it's really kinda random.

Do u think my gauge is jacked? I don't think its possible my coolant can vary that much in 10 or 15 seconds & if it's really hot shouldn't my fan come on?

so where is my thermostat? So it's possible 4 the thermo to take a crap & read hotter than my coolant actually is? I thought it might b the gauge sender cause it runs cool 99% of the time & the needle only goes up for a few seconds. The thermo just opens to circulate water thru the block so how could that make my needle jump up so quick & then fall in a matter of 10 seconds?

Same thing happened to me with the temp guage...and then my water pump died.
