Ok for the oil burning do a compression and leakdown test to pinpoint if the leak is coming from the piston rings or the valve seals. What color is the smoke by the way? As for the oil pan. Make sure that when you put a new gasket on to clean both surfaces ver well and make sure no foreign objects are on either surface. When installing the new gasket use some high temp sealant around the entire gasket. I had a leaky pan and performed the steps above and haven't had a problem since. Also make sure you tighten the pan up according to the pattern listed in your service manual.

You can rent or buy both the compression test kit and the leakdown test kit at a local auto parts place. They are really not hard to do and will give you an idea of what kind of condition the engine is in. You can just use the manual from your stock motor. The oil pans are very similar and the install procedure is the same.

This is a good how-to for the compression test.
