had a problem getting a plug out, Finally got it out but has i was putting the new one in part of the ceramic chip off. I was told that it would be ok to still use it since the rubber plug wire covered it..... started the car and it ran fine and no blue sparks. Do I need to replace the plug or leave it has is?

I would replace it just for the simple fact that there is a reason the cermaic is around the spark plug, just to be on the safe side.

Replace the plug. A cracked ceramic will decrease the plugs efficiency and will lead to misfires. It can also cause electrical interference.
