I brush paint all my interiors. If I had an airbrush I might spray them but I enjoy using the brush (more personalised models that way)

depends on the car, sometimes I'll spray each piece individually, but for the door panels I always use a brush. For the floor I always spray it.

Try and spray as much as you can as the finish is better. Most interiors are black so spray with a black can if possible.
If you have to brush, use enamels as they take longer to dry and gives you a little bit more time to paint before they start to dry and leave brush marks.

If you are brush painting the dash or seats would it be a good idea to thin the paint down?so it dries flat, and do a few coats?

I airbrush most parts and just use a brush for detailing or very small parts.

I usually spray the interior. Not because of the results, but because it saves time. I actually get more realistic results with brush paints, thinned a little bit. A mix of flats and glosses work well for leather and vinyl.
Also, try using flocking material or fuzzy fur on the carpets. It looks great when its done, and it`s very realistic.
