how do i change the thermostat in a 95

I have a 95 that is still overheating. I have replaced the radiator to find out that it still gets hot (last night drove 10 miles got up in the red on the temp. gauge). I found out this morning that my mechanic didn't check anything else, ie thermostat, fans etc., he just jumped in and replaced the radiator. Futhermore, he just told me that the thermostat has nothing to do with the radiator. Already have taken it back to him 3 times in 3 weeks (2 for the radiator 1 for transmission selonoid problem after he chaned the ATF). I think I am done with him.

I will now attempt to change the thermostat if someone can tell me how to!

Just two bolts hold the water neck onto the water pump. The neck is painted black and is also the thermostat housing. Drain, remove lower hose from the neck and undo the bolts. I would get therm from either the dealer or NAPA, you have to get the coolant pellets from the dealer anyway. When you install the new one be patient because you have to slightly compress the spring on the therm to seat the neck and tighten the bolts and it's easy for the therm to bind inside in the process. What are these coolant pellets? Do you have to use the pellets?
My mechanic that installed my new radiator did not use them - of course he didn't change the thermostat either - just replaced the radiator in hopes of fixing the overheating.

One inch by one inch thick tablets made of ground ginger and nut shells. They dissolve in the hot coolant and help to seal any small leaks or pores in the aluminum. GM recommends for all their all-aluminum engines.
