Cooking for a Vegetarian

Has anyone got any quick, easy vegetarian dishes i could cook for my girlfriend tonight?? always do pasta and getting a bit bored now!!!

vegetable fajitas
pita pizzas -do white pizzas on pita bread with just oil, fresh chopped garlic and cheese- no red sauce, and shrimp or veggies. sliced tomato and red onion is good too

now I'm hungry

Hmm, the Wendys Baked Potato. I have brought my Gf one before. I have no idea what it tastes like. When I go too Wendys I have to get some form of bacon burger.

The bacon burgers are good!!

Damnit now I feel like Wendys!!

I would go eat wendys, but my mums already cooking dinner

bah, and i bet you the bacon doesn't even have pig in it, its probably reconstuited potato. But yes i might try a baked potato after my exam tomorrow.

wow, didnt expect this response!! thanks for the input people!

did a vegetable stir fry in the end, with some quorn (fake meat - mushroom protein i think), in a sweet and sour sauce. oh and noodles. went down well!!
