1 or 2 fans running

Hi all
I own a 1999 --156 2.5 v6--what a car i just Love it. Its had its probs but considering 92,000 miles and the way i drive it i'm more than pleased over the 5 years i've had it. Any time i sat in traffic i knew by the sound that both fans were kicking in. Recently though i had to change the radiator and refreshed the coolant. Now only 1 fan kicks in. I phoned the Garage and they informed me that the second fan only comes in when its really needed.
Is this true ?

In my 156 V6 all the 2 fan work at the same time.
We are 2 speed an 2 time depending on the clima
and the external themperature.
