Temperature sensor question

I have a 2000 Pontiac Grand Prix GTP and over the last few weeks I have noticed that the temperature sensor has found a liking to 37 degrees F, it has been in the 90s outside! On occassion after driving on the highway a few miles the sensor will get into the 70's. It will also then drop back down to the 30s.
In the owner's manual it said that AC will shut off at 38, so it makes driving rather miserable. Is this anything that I can fix/look at myself? I am automotive illiterate. Has anybody else had a similar problem? I thank you in advance for any help you can provide me with.

the temp sensor in front of the radiator could be bad its like 8.50 from the dealer on my 99 its super easy to fix but it did not fix mine!! GM part # is >>> 10248414
