180 degree thermostat
I have noticed that alot of MC owners upgrade to this thermostat, but I don't know why. I will be flushing my cooling system soon and converting to the green stuff so that'd be the best time to get in there and do this as well. But why should I. What are the benefits to doing it? Any cons to it?

Engine runs a little hotter thus warmer temps in winter.

CON:
Engine will experience much more wear. The parts are designed to run together @ 195 not 180. Your computer will also be running as though the engine is not fully warmed up. NOT A GOOD IDEA unless of course it's a beater then WHO GIVES A Sh-T

I live in the desert my 03 ss running a little hot, i had a 180 thermastat and just put a 160 in it a couple days ago. should i put the 180 back in it? IT STILL SEEMS TO BE AT THE SAME TEMP. JUST A LITTLE LESS COOLER. Is that bad 4 the computer?

I would recommend putting a thermostat that matches the factory original as to temperature . The factory spent a lot of money to determine the optimal operating temperature for your vehicle and I believe you would be well served to go with their choice . Just my $0.02 !
