ac cuts out on acceleration (Load only)

It sounds right,most systems do cut off the compressor under low vacuum conditions (heavy load) also make sure the engine is not laboring,tune up ect.

I understand that the compressor will shut off during wide open throttle, but just the slightes amount of acceleration at any speed causes this to happen.

Yes, air still blows through the vents, but the compressor is not running, therefore, the air is not cold coming out of the vents. This lasts for about 4-5 seconds after constant speed is reached. It does not matter what speed I start off at.

Did this start before you changed the vacuum canister if not than you either have low vacuum or the PCM (power control module) is not sending the signal the the compressor relay correctly.
