will these fit?
would the tire size 215/40/18 fit wheels that are 18x7 and 18x7.5?

yes, those tires will fit on those rims.
215 is the tread width in millimeters 40 is the size of the sidewall in percent of the treadwidth, so the sidewall would be 215x.40= 86mm tall 18 is the rim diameter that the tire will fit in inches
