fluctuating temp. gauge?

I did the head gaskets on a 350 chev. because it was overheating. Now the temp. gauge fluctuates steadily. As if the thermostat is opening and closing and can't find a happy medium. It never did this before?

I had this on my Fiero GT. I replaced the Thermostat and it stopped.
