Fitting Tires on my 1999 GMC new Body style

I'm looking for a little help and advice on tire sizes. I have a 1999 Sierra (new body style), 2500, 4x4, extended Cab, long box with the 6.0 Litre. A few years back I put Alcoa wheels on it (pretty much the same size as stock) with Yokahama Super Diggers V's. The tires are the stock size as well (245/75 16's). I use my truck for all sorts of things from city driving to a little off road, to hauling motorcycles to carrying our full size camper (heavy). It's now time to replace the tires and I wanted to go a little bigger (ie. 265's) but I've been told that I should stay with stock. The reasons I have been given are: bigger tires may mess up the anti lock breaking, not as good for heavy hauling like the camper, speedo will be out of whack, tires will rub on hard turns, breaking won't be as strong to name a few. I thought going one size bigger wouldn't be such a big deal but it's starting to concern me with all this negative feedback. ANY help, advice and/or experiences would be greatly appreciated.

One more thing. I wouldn't mind getting the front torsion bars turned up an inch when I get my new tires (whatever they end up being). Other than getting the front end realigned, is this going to be OK??

WIth newer trucks, there are a lot of things keyed to the rolling diameter of the tires. You wouldn't be able to vary more than about a half inch without having the computer controls reset at a shop.
