95 grand prix gtp 3.4l

my 95 pontiac when stone cold of a morning it cranks up and the rpms jumps to right before the rev limiter stops it the goes down to it shuts off unless you catch it with the pedal and rev it back up yourself and it will not idle cold at all.i unplugged the mass air flow sensor and it does not rev up like i just explained and shut off but as soon as i plug it back in it surges again until finally shutting it off.i love the pep that the 3.4 has but i have to admit it is the coldest natured car i have ever owned.if any of you experts and pontiac lovers like myself has any ideas to bring the pep back in my gtp and get my wife off my case i will be greatly aprreciative to you.
