I know that it´s quite common that freshly killed chickens (whose head has been cut off) can live without a head till they´ve lost too much blood and die because of that. Chickens are really stupid and simple built animals so IMO it´s well possible that they can survive without a head when the bleeding is stopping early enough and most of all this spinal stuff is still doing it´s job. I´d say it´s true.
