By-pass EAF Sensor?

Is There any way to By-pass the Electronic Air Flow Sensor on the 1.9 SEFI motors. I tried just diconnecting it and the thing died out on me, (sent too much fuel to the Cylinders). But I want to completely disconnect the Air Filter from the intake to play around with a already dead Escort. I found out that if I completely remove the air filter hose from the intake, the motor rev's quicker due to lack of resistance. If anyone has any idea's, let me know.

I street-rod my `92 Wagon up and down the road and am trying to make it rev quicker with no reguard for fuel consumption. Just trying to have some fun!
