My Silverado 1999 with 5.7L vortec needed the head gaskets replaced because of that sewer liquid some people call dex-cool, but anyway, before the seals were replaced my truck ran really cool (1/4 of the gage indicator range) even when towing in 100 degree weather, now right when I got the truck back from the highway robbers (I´m sorry, the dealer, sorry for that) I noticed since then that the gage now reads at half way, did they put a higher temp thermostat in or what?? Plus I live in the desert and it seems a lot of people take the thermostat OFF for the summer so it runs cooler, anybody see something wrong with taking the thermostat off and going back to the green stuff for coolant?? I mean I mostly use it as a boilover prevention more than an antifreeze anyway.
The gaskets got replaced at 60,000km (37,500 miles). That is a disapointing mileage to change head gaskets, and if GM doesn´t want me to change my nick to Titanman instead of silveradoman they better get their act together and let their engineers, well, engineer instead of pushing for timings to be met.

Couple of thoughts I have for you. Perhaps your Temperature sensors are getting out of calibration and may need to be replaced but, I think your on the right track with the thermostat issue.
There is no harm in running a cooler thermostat or none at all. I use to run a cooler thermostat in my 4.3 L just to save on engine temp and pressure on the headgaskets. You could just remove it or just put a cooler one in and you will probably be fine. My 5.3 L that I own now always shows the temp just below half and never seems to move from there so I am assuming all is well. Cheers

You may have an air pocket by the sensor in the coolant,with engine off remove the temp sensor in the head,should be between #1 and #3 exhaust ports,see if coolant comes out if not add coolant untill coolant does come out.Do it while the truck is cool and be quick to put the sensor back in if coolant does come out
