escort 94.put new motor in. water temp goes crazy when accelerate. why?

as my title says ..i just put a new motor on my escort 94 but when i accelerate, the temp gauge goes all the way down to the cold position and it will remain there as long as i am accelerating. once i depress the accelerator the gauge slowly moves up to a normal temp ...any ideas why is this happening?

well that does sound a little wierd, if it would be running hotter than usual, I would say to check for a exhaust leak around the bottom of the manifold into the downpipe, if there is a leak there from a loose bolt or something, the oxygen sensor is within like 3 inches of that flange and if there is fresh air making it into the pipe its going to mess with the sensor and think that the engine still has osygen in it and its going to make it run hotter to try to burn it all up. but if its just making it up to normal, I really dont know what to tell you.
