1992 pontiac bonneville sse

i need some help guys, i have a 1992 bonneville and i'm having some problem with the cooling fan at firs i thougt it didn't work but it does work the quiestion is that the fan doesn't turn on till is reaching the red part of the gage and is to late becouse the car turns off by it self and i have to wait about 5 to 10 minutes to coool down and then it will turn on again and so to avoid that to be happening i have to keep the AC on at all times so that the fan stays on, i've put a new radiator, cooling sensor any ideas will be aprciated.
