99 Silverado-Cat Conv's and O2 Sensors??

If I were to remove my Catalytic Converters on my 99 Silverado, would I have to replace the O2 sensors before and after the Converters as well? This is a stock 5.3L (120K miles) with stock exhaust, I think one or both Converters are clogged... or what is the best method for checking a converter?

plugged converters

I just replaced the converters on my 99' silverado. A quick check to see if they are plugged is to check the temperature of each converter at running temperature. I am not sure what the exact operating temperature is but, when we checked mine the driver side was approximately 300 degrees and the passenger side was 400 degrees. My check engine light kept coming on and a diagnostic check showed malfunctioning 02 sensors.
