Best option for me.

I have about 7 maybe 8 grand to spend on a new car.. but I really don't know what I should go with.. I am wanting a project car, that would be a good beginners car to learn from. I want something I can do alot of work to with aftermarket products. Something with good handling and great HP potential. I will also be using this for a everyday car so I want it to be fairly efficent on gas. I know thats alot to ask out of 7-8gs, but maybe someone can give me my best option. Thanks alot.
