Pontiac 421 - 1966 GTO with a bit of a rake sitting on some Keystone Kustom mags.

Chevy 283 - build it with the crank-driven blower and stick it into a front engine dragster like the Jawbreaker rail that AMT recently reissued.

Cadillac 354 - This belongs in a sled. Track down a '49 Mercury, nose and deck it, drop it down on some wide whites with Sombreros, and keep as much of that engine's chrome intact.

Ford 427 - Isn't this one obvious? Build the Shelby Mustang that never was! Dual quad Cobra spec 427 in a 1965 Shelby GT350R body, add even wider period tires, massive flares, and a discreet decklid spoiler. End result: 1965 Shelby GT500R.

Great feed back all, keep it coming.
Please remember that I am in England so any picture of these kits would be great because I am going to have to hunt around for them.
Cheers
Mark

Here's a picture of the Jawbreaker kit as it looks in its packaging for this year. Grab it as soon as you see it if you want it, because it's part of AMT's limited edition BCP program.

and here's a similar one that was reissued recently.

That kit actually comes with all the parts to build both of those dragsters. So you can build one with the 283 (I'd say build the T-style one with the 283) and build the sleeker rail with its 426 Hemi. It's a beauty of an old kit, if a little fiddly.

For the 1966 GTO, the kit to use is the recently discontinued (hell if I know why, either, since they released it first in 1998) Revell 1966 Pontiac GTO.

The AMT/Ertl '49 Mercury kit is an old soldier in modeling, but it's a great old kit and is both accurate and fun to build. The most recent reissue looks like this.

And finally, the GT-350R is a bit of a trick to find. It's a Monogram kit that hasn't been reissued in a while. But it's worth looking around for.

Hope that helps.
