I'm going to be completely honest with you. All kits vary depending on who manufactures it, what it is made of (sprayed fiberglass, hand-laid fiberglass, or urethane), and also the mold it was formed from. This will determine how well it will fit on your car. Most kits are designed to bolt on with just screws and maybe a cable tie here and there... but a lot of kits don't fit PERFECTLY and require just slight adjustments.
If you want a kit that fits almost perfectly, the higher end kits will probably be best for you.... though many kits look better with body work like molding and things like that. About the whole "paint later" thing... I totally understand where you are coming from as I am someone who doesn't have a lot of money and I buy everything one small step at a time. But... I honestly think that if you drive around with your kit on the car unpainted for a fairly long period of time, you will be frowned upon, laughed at, etc. If you don't want to deal with that, buy the kit, try it on [w/out actually bolting it on (try cable ties) to see if it fits], then take it off until you have enough to get it painted and installed correctly.
