77 Impala 2 Door Need fair Value

I have a Impala 2 door in good to V.good condition. How can I fight an insurance totaling payment of $1000? This is a limited availabilty car now and I know a classic. I paid $2000 for car, 70,000 miles w/ nice interior. The insurance company doesn't have a clue, or they do and they are just being difficult. Any advice?
