odd question

I've seen info on dirver position, how to shift while racing, how to wield the steering wheell, car lighting, suspension setups, and many other things on setting up a car for anything that is "performance". But, I have never seen anything on the positioning of the side mirrors. Is there any "different" thing to do to them?

adjust them so you can see without having to move your head very much.

The way I figure is to have them adjusted so that when a car behind you is leaving say the drivers side mirror. It is entering the center review mirror at the same time. And same for the passanger mirror. That way you have no blind spots back there.

That is exactly right. Rear vision should flow from one mirror to another.
One more point, make sure the mirrors are mounted so they can be adjusted by hand. Some sports cars and cars from the 60's often mouted the side mirrors on the front fenders, these are a real disadvantage if the car behind has their high beam lights on, you cannot move the mirror. A quick lesson learned in rallying.
