How much of this can I do myself and how???

I have a 1980 Chevy Camaro and I want to redo the whole interior. I have found out where i can get new seat upholstery the color i want, were to get new carpet. I dont know how to put either of those in and i can also get a new steering wheel for it, how hard is that to put in and how do i do it? also the dash is in good condition, but its the wrong color, i have been looking into it and would Krylon Fusion plastic paint work on that or would i need a whole new dash? Same thing with the console. And finnaly, the onld ceiling roof thing- whatever you want to call it- is really old and i have already removed the fabric that was there, how do i put new fabric up there, would a 3-M adhesive work? also what kind of fabric should i put on there. I want the whole interior to be gray. Alot of stuff to do...HELP!!!
