The difference between the 5w-40 versus the 15w-40 is the 5w-40 will get to the top of the engine faster and lubricate hydraulic valves a wee bit faster.
That said, in temps such as the lowest being 40F and highest being 125F, you could use either viscosity and be just fine, and yes, I'd run a 40wt year round in those temps. If I still lived in the desert of the southwest, I'd for sure be running a 40wt yr round.
