for overall development it is helpful to vary your exercises from week to week, specificaly toward the areas you are most interested in working
Outer Chest- db flies(go low), dips, incline/flat db/bb bench (lower 3/4 of movement) Inner Chest- crossovers, narrow grip bech Lower Chest- decline db/bb/machine press, dips, decline flies(decline pretty much anything), cable flies Upper Chest - incline db/bb/machine press, incline flies You can experiment with all of these, but i dont know of any good chest exercises that dont hit your shoulders too

The flies will hit the shoulders less than some of the others.
