How much harder is it going to be to drive the 300zx compared to a Civic SI?

How do you mean? I think the Z is easier to drive. That is just opinion though. All I can tell you is to drive both!

I've driven one but haven't driven the other... so I'm at a bit of a disadvantage when looking for a Z. I know how it feels when the clutch slips but that's about it.
