how much paperwork do I have to do?

I want to get a $100 craigslist beater or three in about a year, for the sole purpose of hooning them to death on some trails. I'm not terribly familiar with the legal stuff surrounding vehicle purchase and disposal, so I'm wondering what the easiest way to go about getting these cars would be paperwork- and DMV-wise, then handing them over to a junkyard. Does every yard require a registration? Will I need to insure vehicles that I intend to break a week after buying them? Is a title good enough? Any advice would be appreciated. If it's too much trouble I just won't do it.
