My fan speeds up and lowers on its own.

that is normal, the condenser fan is controlled by two relays (normal and high speed relays) Normal speed relay will be grounded whenever ac is on, when coolant temp reaches 190F the high speed relay activates.

Do a search on Final Stage Unit, common problem with these cars.
