Unhappy 2000 Nissan Terrano 3.0 Diesel Cooling Problems

Hey All
New here from New Zealand. Been having cooling problems where the water gets pushed out my overflow bottle when running under load. Have replace cap and thermostat already and the bleeder dingle is on top. Engine only overheats when it runs low on water. Have been to several mechanics and have only gotten guesses on what the problem is. Any Ideas???? If at idle the problem does not show up. After running it hard for some time then looking at it at idle there is water bubbling up in the overflow bottle. Need this fixed ASAP as is cutting into my quality fishing time.

I have the exact same problem with my Ford Maverick which has the same engine as the terrano. Can anyone please shed some light on this and is it a common/known issue?
