French food

Man, french people eat alot of things that alot of people haven't heard of or wouldn't even think to eat.

my dads side is from quebec but with more french influence than quebec influence. so i'm going to list some of the weird stuff we eat.

Pâté: It's liver mixed with fat, spices, wine, vegetables, etc. you can cook it but my family usually enjoys in on toast or on croissants.

Cheese: We eat all kinds of cheese, some of it smells horrible. I personally like brie and other soft cheeses but Oka is another very popular cheese among my fam. Oka comes from the Oka area, a few hours from montreal in quebec canada, it used to smell REALLY REALLY bad, it smelled like feet. now the monks that make (made) it have been forced to do something to remove the smell, it tastes good, old Oka can taste very strong, a little too strong for many not accustomed to this kind of cheese.

Meat: Well here's the fun part. The thing I really love about french cuisine is that many of the meals are very social events. Fondue (which is actually swiss but we enjoy it at many family gatherings) for example is a perfect meal for a social gathering because you can talk while you wait for your meat to cook, it also allows you to eat the same ammount of food as in a short meal but without the feeling of being ready to burst if you eat too much. My favorite fondue is fondue bourgignone, you cook meat in oil (and sometimes butter, my fam uses half peanut oil half butter) then you have a variety of serving sauces. Some people use beef, we prefer chevaline (for those who speak french or know what this means, don't post it, it might disgust some people, if they want to look it up they can but seeing as how it's widely seen as wrong to eat this in most english speaking countries i'd prefer not to make it public) because it's more tender, has more flavour, and is juicier than beef.

There's also Raclette. It's the name of a type of cheese but also a dish. you get some meat, vegetables, bread, and cheese (you can use raclette cheese but my fam goes the cheep way with Oka). you're supposed to melt cheese and scrape it onto your plate, accompanied by the meat, veggies, etc. but we just get bread, put some meat and vegetables on top, then melt the cheese on top of that, it's really good. we've got a machine type thing that is meant for this, you cook your meat on top of the stone (or use dried meats) and your veggies as well. then you put the bread, vegies, etc, on a special plate, cheese on top, then stick it underneeth where it melts the cheese, pull it out and eat. traditionally it uses dry meats but we use uncooked meats and seafood as well (shrimp and scalops).

There's more but i've got to make my own lunch and go to work so i might continue later.

It all sounds very good. I like cheese, so maybe i'll try some of the ones you listed. Its nice to see your family is very influenced by their culture, and ways. Now i must go look up chevaline.

you would think it would be tough but it's actually really good. it's tender, juicy and really tasty. steaks are good but it's simply divine when you have it in fondue, we've tried beef but it simply isn't the same.
