Angry 1989 grand prix LE cooling problem

ok i have a 89 grand prix le and it keeps over heating. i put a new thermostat in it. the fan doesent always turn on so the temp gets all the way past 260 on the gauge and then it will all of a sudded drop back down to 100 and the coolant light will come on. when my dad and i where working on it it seemed like it was buring up all the anitfreeze that we put it in but i didnt smell like it. so im not sure if it was just filling in air pockets that might have been created when we changed the stat. lookin for some help pretty soon.

If the overheating started when you changed the thermostat, then you have air in the system somewhere, usualy the highest point - GM was nice enough to put bleeder screws on most models.
