Project looks/sounds good. I'd personally go for the 13B rotary to stick with the Mazda theme. Also, if you're like me and think about how it would actually be like in the real world, the 13B would be great for weight distribution vs. a heavy/bulky V8 or V10.

You can either use the 13B-REW (twin turbo version from the late model RX-7) or the latter single turbo model (13B-T) from the FC3S version. Some of the Tamiya, Aoshima, or Fuijimi kits have the 13B-T engine in them (http://www.1999.co.jp/eng/10049082). I think even the engine from the new Mazda Roadster would be really cool too (http://www.1999.co.jp/eng/10049073), which the Fujimi kit includes.

Of course it really depends on how crazy you want to go on the project.
