Craftsman,Irwin and other companies make a set of extractors for stripped bolts. I have a set of blue point they work very well for this purpose.
Channel locks or a pipe wrench may also work but I would buy a set of extractors. Napa,Pep Boys and other parts stores carry them.
You can also file the head down to a smaller size.

A small pipe wrench usually works for me.

I had the same problem, unfortuantely self induced! I got pissed off and told the wife to get an oil change done by someone else! The mechanic took a pipe wrench and spun the bolt out in two seconds. I felt pretty dumb after that, but I didn't forget that trick!

The parts stores sell new bolts after you take the old one out.

A Good Pair of ViseGrips and a new Oil pan bolt.
If you have no luck getting the drain plug off - You can get a hand pump and suck out the oil from the dipstick tube, but the oil must be HOT HOT. It wont suck all of it out tho "Half a Quart left or so", but you never get it all out anyway with the plug.
Hand pump 6 bucks with the small tubing. Hot oil isnt fun so be smart.
