Emission Light back on

I just purchased a 2000 Sable with 32,000 miles. Two days later the emission light came on. No problems but idle got worse and it would die during stops after being warm.
Mechanic read the code "too rich" and "too lean" Mass Airflow Sensor. The dealership gave me one. (3 large automotive chains did not carry it and only one could give me a price) I put the MAF in and it idle and ran beautifully. 3 days later (now) the light comes back on again.
Question: the dealer talked about the car "relearning" (I nodded and took my part) is there anything to this?
