Two come to mind...Acura Integra and the Toyota MR2. Both have popular drivetrains and the MR2 is mid-engine 2-dr. You could also try the Honda Prelude, but I don't think the AM parts base is as wide.

El Camino. It has two doors, seats 2-3 depending on what seats you use, and it supports TONS of aftermarket parts... and I mean that both ways - there is a huge aftermarket following, and you can support lots of aftermarket parts in the bed.

I have seen some mid-engine El Camino conversions, but its not cheap or easy.

79-93 Fox body Mustangs.
2 seater if you remove the back seat and tons of aftermarket parts available.

Re: Suggestions for donor car

What is the car for? The Nissan Z cars are 2 seaters with a decent aftermarket (especially for engine swaps). The Pontiac Fiero is a mid-engine 2 seater, but it has a limited aftermarket unless you are doing an engine swap. The 88 GT supposedly has a better chassis than the other models. The Merkur XR4TI has the 2 door thing and a fairly large aftermarket (shares basic components with the Ford Sierra and Escort Cosworth), but it has a shoddy reputation for reliability in the states.
