heating problems

I would like to know if anybody knows the correct temp of a civic. i get 180 to 200(f)
For the water temp.I'v been haveing
overheating problems when i am in traffic or a stop light..I bought a brand knew fan switch and thermostat from the dealer. The fan turns on about 210[f] and at the temp my car is starting to overheat. So I know that 210 is way to hot. And it is not a blown head or bat water pump. Because if it was the blown head the my car would be running like shit. same with the water pump. So they say?

it could be alot of things. umm pressure lost, cracked hose or non tightened hose, bad radiator, bad water pump, bad radiator cap. if u have ac u should run that, cause then the ac fan will come on and help with cooling. umm does it smell like coolant in the car ? cause if it does then the heater is gone and leaking
even if u have a bad water pump, the car could still run good. but if it is a bad water pump i would change it because thats how my belt seized and caused it to break and i bent a few valves, so gotta watch taht water pump

210 sound about right for the fan to turn on. how do you know its not your gauge or the sender?
