Revell answered this request in recent years. You can buy a 1968 Charger either as the Dick Landy issue all-plastic kit, which to build stock would require a wheel swap and factory exhaust manifolds/air cleaner.

Also, there's the diecast body Bullitt edition 1968 Charger, which is a 440 car, but that's easy to rectify out of any well-stocked parts box.

As for my requested car kit, I want one of two sports racing Ferraris in plastic - either a 512M or a 333SP.

How about doing a scratch built roof conversion on the Aoshima / Revell / Airfix 1:24 roadster? Not an MGB fan so won't be attempting it myself but it doesn't look too difficult

Well, Bob (Zoom-Zoom) did such a conversion and it was released as a transkit via the great but defunct All American Models lineup. He's said that he's sent the master to another guy for recasting, but that it's still an ongoing project.

As the owner of one of those Pininfarina roofs on the Abingdon body, I can tell you that there are a lot of complex curves that'd be a pain to scratchbuild. In particular, the hatchback is a sort of concave curve with a sharp edge that butts into the roof proper.

That "another guy" is in my model club and ive yet to get a body either so.... who knows. i do however have the LHD dash for the conversion should i ever get a body. Ive got a '71, whats yours Keeper?
